Harried by the stress of our impending move (this week—eek!), Ryan and I took a moment this weekend to step back and enjoy one of our last summer nights in the West Village.
Inspired by a bag of tender, flawless apricots, we created a sippable, not-too-sweet summer cocktail that eased our frenzied nerves and was perfect for savoring on our fire escape.
If you’d like to recreate it, take one apricot, quartered and pitted, and muddle it in a cocktail shaker. Add 1 oz. of lemon juice, 1/2 oz. simple syrup, 2 oz. of your favorite whiskey, ice, and give it a good shake. No need to strain—you pour into the glass of your choice and garnish with a mint sprig.
You may need to adjust the amount of simple syrup you use, depending upon your choice of whiskey. We used Maker’s Mark, which is slightly on the sweeter side, so we kept the simple syrup to a minimum and our drinks were delicious.
